Why is Brigadeiro so special?
Brigadeiro is a composition of sweetened condensed milk, a good quality of real butter, pure cocoa powder, and fine chocolate up to 50% cacao for a perfect balance of sweetness. The process to make the Brigadeiro is cooking and mixing all of these ingredients in a specific time and temperature. After a few hours, the mix is completely cold and Mary’s team of Chocolate Heroes roll each one by hand into fine sprinkles. The texture is the key for a perfect Brigadeiro as it reminds us of a creamy truffle, but it’s a little bit chewy like a caramel, and intense as a fudge. Nothing is similar to Brigadeiro, and if you’ve never tried it, Brigadeiro will be a new experience in loving chocolate!

  • 500g Brigadeiro Ganache
  • Sprinkles
  • 1 bag Unsweetened Coconut
  • 1 bag Milk Crispearls
  • 1 bag Pistachio
  • 1 bag White Crispearls
  • 1 bag Classic Chocolate
  • 1 bag Cocoa Nibs

Make sure you’ve got 6 Small or Medium Bowls and Paper Towels. It’s also ideal to have a few staples on hand like Butter, Coconut Oil, or Ghee. Now, let’s get cooking!

Note: If your Brigadeiro container was in the fridge, bring it to room temperature at least 1 hour before you start so that the Brigadeiro ganache will be much easier to handle.

1. Pour each Topping and the Sprinkles into separate bowls.

2. Separate the paper cups individually.

3. Have a paper towel or wipe available.

4. Prepare a small bowl or a spoon with a bit of butter for your hands.

5. On a table, place in order: butter, the container with Brigadeiro, a clean spoon, the bowls with the Toppings, and the paper cups.

1. Add a bit of butter to your hands. Scoop some Brigadeiro with the spoon (8g of Brigadeiro if you are using the Crispearls or 16oz of Brigadeiro if you use other sprinkles).

2. Hand roll it in your hand until round. Roll quickly or it will start to become too soft to handle.

3. Place the rolled Brigadeiro in the Topping of your choice, and roll your own #MarysBrigadeiro chocolate until evenly covered. Place it in a paper cup, or in your mouth and enjoy!

4. Repeat the process and try as many as you like. You can mix the sprinkles and create your own combination.
