Marc-Olivier Frappier has established himself over the last ten years as one of Montreal’s most cherished talents. Marc-Olivier began his career as a cook, working in Italy and New York City, only to find himself back in his home province in 2009 with a job at Joe Beef. He was quickly promoted to the Executive Chef role, which eventually spanned across the entire restaurant group and their 5 establishments. Marc-Olivier was made a partner in the group’s newer projects, Vin Papillon, McKiernan’s and Mon Lapin. Under Marc-Olivier’s leadership, Joe Beef obtained a rare 5-star review from the Montreal Gazette, landed a spot in the World’s 50 Best, and spots in Canada’s 100 Best Top 10. Marc-Olivier Frappier was awarded with the ‘Jeune Créateur’ award in 2016 by the OMNIVORE committee in Paris, France, and was invited to cook alongside some of the most legendary chefs in the world. He has also participated in several Anthony Bourdain episodes, Josée Distasio shows and more. Marc-Olivier now devotes his time on his latest venture, Mon Lapin, where he can be found on the line cooking the food he loves alongside co-chef and partner Jessica Noel, and his wife and sommelier Vanya Filipovic.

Jessica Noël started her cooking career at the age of 26. Deciding to go head first without turning back, she graduated with highest honours at Montreal’s ITHQ, and then staged in restaurants in Montreal, New York and Europe. Her greatest influence came from working at Blue Hill at Stone Barns. Working alongside Dan Barber and his team built her mindset of letting the freshest ingredients shine, following the seasons and being flexible with whatever arrives from the farm. When she returned to Montreal in 2017, Marc-Olivier Frappier offered her the position of Chef de Cuisine at Mon Lapin. The small restaurant in Little Italy, in which she is now a partner, dishes out seasonal small plates showcasing local Quebec produce. Jessica Noël was recently celebrated in Phaidon’s ’Today’s Special, 100 Emerging Chefs’, a book featuring the new generation of culinary talents worldwide.
